Oatmeal Egg White Waffles

As Kimmy Schmidt says (if you haven’t watched Unbreakable  Kimmy Schmidt on Netflix, you must!), “Let’s hear it for breakfast!”  One of my very favorite breakfast meals is oatmeal egg white waffles (or pancakes).

To make these you’ll need:

a blender

wafflemaker or skillet

3 egg whites, 1 whole egg

Chia seeds (1 TBSP)

1/2 cup oats (I use gluten free)

coconut oil (1 TBSP)

cinnamon (a dash)




  1. Combine the eggs, oats, cinnamon, and seeds in the blender and blend into a batter.
  2. Coat the wafflemaker (or skillet) with the coconut oil and pour the batter in. If you’re making the pancakes in the skillet, cook on both sides. You can add the berries once you pour the batter, or after they are done cooking if you prefer them to be a topping instead.
  3. Top with honey and enjoy!

I love these pancakes/waffles because I’m getting healthy fats, protein, fiber, and some good, low glycemic carbs to help stabilize blood sugar and keep me full. While I’m currently avoiding oats and green tea at this time in an effort to reduce foods that seem to be higher in histamines and cause inflammation for me, this is an awesome and balanced healthy breakfast for most people. I look forward to eating them again in the future!!
